This bread reminds my husband and I of wholegrain raisin english muffins. This bread is great toasted and is my husbands favorite for sandwiches. I often make it with raisins, when I can’t find dried currants…its great with a bit of each raisins and currants mixed.

Servings: 12 slices with 1 1/2 pound recipe, 8 slices with 1 pound recipe
Prep Time: about 15 minutes Cook Time: according to bread machineIngredients
1 1/2 Pound Recipe:
1 1/4 cups water
2 tablespoons butter, softened
3 cups bread flour
1/2 cup old fashioned oats
1/2 cup currants or raisins
3 tablespoons packed brown sugar
1 1/4 teaspoons salt
1 teaspoon ground cinnamon
2 teaspoons bread machine yeast
1 Pound Recipe:
3/4 cup plus 2 tablespoons water
1 tablespoon butter, softened
2 cups bread flour
1/3 cup old fashioned oats
1/3 cup currants or raisins
2 tablespoons packed brown sugar
3/4 teaspoon salt
3/4 teaspoon ground cinnamon
1 1/2 teaspoons bread machine yeast
Directions
MAKE 1 1/2 Pound Recipe with bread machines that use 3 cups flour, or make 1 Pound Recipe with bread machines that use 2 cups flour.
MEASURE carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.
SELECT Sweet or Basic/White cycle. Use Medium or Light crust color. Remove baked bread from pan and cool completely before cutting.

Don’t have a bread machine! But faked my way through it. Used the exact recipe save for about 1/2 cup of bread flour less–dough didn’t want to take more than that. Did the usual two rises and baked in a 350 degree oven for 40 minutes. I highly recommend this loaf. It’s DELICIOUS! Moist, chewy and dense. I used a combination of raisins and dried tart montmorency cherries. Will be making this regularly!
