Hi,
We were gifted with about 30 pounds of sour oranges? now what to do with them? has anyone used this type of orange for marmalade?

I haven't but the concensus around the web seems to be that marmalade is a good option! I also found this: http://www.thekitchn.com/5-use…..ice-119172
which might help you find uses for it. A surprising suggestion was using the juice for pickling! If you do that I'd love to hear how it turns out!

I love marmalade. Particularly the sharp tanged Brit version in the milk white jar which I eat all by myself since no one else can tolerate it. But I have only made such from sweet oranges or Meyer lemons which is decided different than the Seville variation … I have a stash of the lemons in the frig from our small tree waiting for processing into sweet delight. Where did you get sour oranges? … I'm only a half hour from you in the CA valley.
30 pounds would make ALOT of marmalade! The juice pickling idea looks really interesting … wonder if there's a relatively inexpensive way to finding out how acid an orange is? Wouldn't sweet summer squash pickles be wonderful in an orangey brine! I'd sooo love to try that.

I was in Auburn at my hubbies dad's doing tax's, they have an orange tree in the yard, he had buckets of the oranges and asked if I wanted them, he had just picked them and no one else wanted them, we both did not want them to go to waste, so now I have a very LARGE box of sour oranges. If you are coming up this way, I would love to share with you!!!!! I don't think I have that many canning jars to make all that marmalade.

Oh lizzie, thank you for that generous offer! This morning I had oodles of time over this weekend and by this afternoon it had all gone phfffffft! Repairs at my mother's apartment, deadline project with only daughter + her FAFSA filing (Pell grant for college) for Feb 2nd which requires me to finish home biz bookkeeping to do 2011 taxes asap. Forgot that last deadline and now suddenly there's no time for a lovely drive up hwy 49 let alone processing citrus, dagnabbit. You'll now have to relay how one batch of marmalade works out with these oranges for your small lot of jars … maybe you could squeeze the rest of the oranges and freeze the juice?
Wait, why couldn't you use orange juice instead of the water in the Lebovitz recipe? … maybe an extra cup of sugar to counter the tang? If you haven't done marmalade before it is one of the more tempermental of the preserves … go for the thermometer to check for temp over the plate test. Had better success that way versus the overcooked "gummy bear" texture in my first marmalade venture. Good luck, love to hear how it goes …..

I will let you know how the marmalade turns out. Very sad day for us, we had to put our beloved Hannah down, she was 13. We will miss her so much. Maybe tomorrow I will be in the mood to tackle the sour oranges.

Sour Orange is also an excellent marinade for pork, chicken, and fish. I use it all the time cooking traditional Cuban food for my husband.

I grew up in Miami, and there is not too much I miss, except the food. Even the sour oranges. Especially the avocados, mangos, key limes, grapefruit, guava, Cuban bread and puerco asado.
As a gringa, I have many tales to tell of shopping the local Cuban markets. Is Homestead still a mecca for U-Pick fields?
Every holiday, here in West Virginia, we plan at least one dinner to be Cuban!

I have not made the marmalade yet, but I did use a dry rub on a whole chicken and stuffed it with a cut up sour orange, and basted it in the juice last night for dinner. It turned out great, I still have lots of oranges to make marmalade with and I promised my Father inlaw a jar, so I had better get busy. Thank you all for the wonderful ideas on how to use the sour oranges.

I have been here a year and I have not been able to find any fruit stands. That has been my biggest complaint. My husband forced the move down here, it wasn't my choice. I am now waiting for my lease to be done and then I am on the first train out.
I have been trying to get in touch with anyone who lives in northward Florida, (Tampa, Plant City, Ocala, etc.) to scope out what it is like up there. I miss being able to get fresh fruits and vegetables direct from farms. My kids have been begging for jams and pies.

We used to comb the classifieds to look for the u-pick fields. It has been years, but we used to pick tomatoes for 10 cents a pound. There may be a different venue now, a local markets website? We used to head west on Kendall, and hang a left on Krome Ave. Again, watch the ads, we used to reply to ads at people's homes for grapefruits, 5 cents each. We would send the girls up the tree and they would bean us parents. Shop the Cuban markets, mangos are a delight. Guava pastelitos are almost worth driving back there for!
While looking up the address for Knaus, I saw a website for Rob's Redland Riot Road Rallye (http://www.redlandriot.com) That sight looks at the quirky style and history that is the Miami I grew up in and mostly raised my girls (I was there 1961-1993). It is a very different life to get used to, but there are some incredible places and things to do. Fairchild Tropical Gardens, Matheson Hammock, Road trips are a blast….head out Tamiami Trail or Card Sound Road. Head to the keys, (you don't need to go all the way) skip the tourist traps, and just stop on the side of the road. You'll be amazed how far you can walk out in shallow water.
We left in 1993, just after Hurricane Andrew. My late husband had a lung transplant in MO, and we really needed to be closer to the medical professionals. Although I love where I live now, and would not move back, I treasure the years I lived there and the wonderful experiences.

Christy, I have a cousin who lives around Dover Florida (close to Tampa) and he has a u-pick farm. I don't know what all they have but I do know they have strawberries and green beans and squash. I think it is called Jordan Farms…this place has been in his wife's family for years. His name is Ron Clark.

Sour Orange Marmalade update, it was a success!!!! I have never been a fan of store bought orange marmalade, only purchased it when needed in a recipe, BUT this marmalade is different!!!! I love it!!!!! so very yummy on any and everything! Tonight I am going to make a second batch, then HIDE IT!
